Darrell Felstead



At the tender age of 12, Darrell was introduced to the magic world of hospitality at the Peacock Inn in Sussex, England, where he worked in the kitchen. His first full time job at The Savoy in London opened many doors and soon he was honing his skills at acclaimed Michelin Star restaurants including Pied a Terre London, Le Piurrie France, Café Royal London, as well as the 3 hatted Level 41, and Banc in Sydney.

Darrell had the unique opportunity of opening Sydney’s GPO as Executive Chef in 1999, which was a revolutionary concept. He was then given the challenge of reinventing our very own 3 Weeds Rozelle, which re-opened with critical acclaim and won a Chef’s Hat in its first year. In 2007, Darrell went out on his own and opened his own restaurant and bar, Foveaux and The Red Door, which won the coveted Best New Restaurant award and a Chef’s Hat within four months. To keep up with the times, he moved away from fine dining and transformed the restaurant into Foveaux St Dining and Deli Wine Bar in 2015; a fun, contemporary take on dining.





From the south west of London, working in the hospitality industry for over 20 years and in Sydney for 8 of them. Tristan was part of the opening team for the Argyle on the Rocks, opened Chophouse and Spice Cellar. Tristan has also managed the Blu Bar level 36 at the Shangri-la Hotel Sydney for 3 years and recently finished up a managing Merivale's Establishment Hotel.


In 2010 Tristan was in the top 5 for Australia in the Ultra Pour competition and on the Sunrise Morning Show making cocktails for the release of sex in the city 2 with Moët and Chandon.

Sam Nicholson started at the Weeds in 2006 after an 18 year “working holiday” in Europe. She has been a manager at Harvey Nichols Restaurants, Oxo Tower and has run catering at other prestigious London locations including the Barbican Centre, English National Opera and the Natural History Museum amongst others. She returned home via southern Spain where she opened and ran a cocktail bar H2O on popular Burriana Beach in Nerja.


In 2007 she met, encouraged by Mark Thompson our Licensee, her now husband Tim in the Front Bar. And they lived happily ever after.
